Lord of the Hundreds 300g
A unique open textured cheese with a slightly sweet, nutty flavour. Matured for 8 -10 months.
The cheese is made using Ewes Milk and has a square shape and open texture, this is because the curd is gently hand-ladled into baskets where it settles naturally and is unpressed. The cheese then develops its light grey rind over the next seven months and slowly develops its open, grainy texture grassy, rich and honeyed flavour.
The cheese is a hard, naturally rinded, complex cheese, fabulously savoury, yet its flavour hints at caramelised hazelnuts, along with fresh grassy notes.
